Ingredients:

  • 2 medium zucchini, sliced into rounds
  • 1 large red bell pepper, cut into chunks
  • 1 large yellow bell pepper, cut into chunks
  • 1 large red onion, cut into chunks
  • 8 oz button mushrooms, cleaned
  • 1 pint cherry tomatoes
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and black pepper, to taste
  • Wooden skewers, soaked in water for at least 30 minutes

Instructions:

  1. Preheat the Grill: Preheat your grill to medium-high heat, about 375-400°F (190-200°C).

  2. Prepare the Vegetables: Thread the sliced zucchini, bell peppers, onion chunks, mushrooms, and cherry tomatoes onto the soaked wooden skewers, alternating the vegetables as desired.

  3. Make the Marinade: In a small bowl, whisk together the olive oil, minced garlic, dried oregano, dried basil, salt, and black pepper until well combined.

  4. Marinate the Skewers: Brush the vegetable skewers generously with the prepared marinade, coating them evenly.

  5. Grill the Skewers: Place the prepared skewers on the preheated grill. Grill for about 8-10 minutes, turning occasionally, until the vegetables are tender and lightly charred.

  6. Serve: Remove the grilled vegetable skewers from the grill and transfer to a serving platter. Serve hot as a delicious and colorful side dish or as a vegetarian main course.

  • Feel free to customize the vegetable selection based on your preferences or what's in season.
  • For added flavor, you can sprinkle the skewers with fresh herbs like parsley or cilantro before serving.
  • If using metal skewers, there's no need to soak them in water before grilling.
